Tamale Pie (Shanooks Recipe)

Link

Tamale Pie

1 1/2 lb ground beef
1/4 onion (diced)
1/2 tsp minced garlic
Packet Lawrys taco seasoning
1/2 c. cheddar cheese
2 cans diced tomatoe ( 14 oz, mexican style if you can find it )
1 can corn (drained)
1 can olives ( cut them in half )
1 can Marie Callendars corn bread mix

Garnish:
Sour Cream
Cilantro

Preheat oven to 375

Brown ground beef, half way through browning add the onion, galic and
taco seasoning. Drain fat. In mixing bowl mix all remaining ingredients,
except corn bread mix. Then put the mixture in a casserole dish. Prepare
Corn bread mix like it says on the can. Pour it over the mixture so it
just covers the top. Don't do it too thick. You'll have extra just put
it in a muffin tin and bake it. Bake your casserole for about 35-40
minutes. You'll know it's done when the top is golden brown. Put a
dallop of sour cream on the side and cilantro to taste.

*hint* if you don't have MC Corn Bread mix, just use your favorite and add a little bit of sugar to the mix

I love Ruth Reichls books. Mona et al, have you read her two volumes of autobiography dealing wih her early life from childhood? The first book is called 'Tender at the Bone' and I can't recall the 2nd title but it deals with her early foodie career and her heartbreaking attempt to adopt a baby girl who is then 'taken back' by its birth mother after changing her mind.

Some more recommendations-

'The Cook and the Gardener- a year of recipes and writing from the French Countryside' by Amanda Hesser

'American Pie' by Pascale Le Draoulec. This is about a road trip all over the USA in search of the best regional pie makers, sellers and recipes. I adore this book and re-read it constantly.

'Stalking The Green Fairy' by James Villas. I cannot recommend this book more highly. If you like food writing covering topics ranging from praising 'Sams Club', real hamburgers, in search of authentic Southern foods like Brunswick stew, an exploration of Absinthe etc etc, you will adore this man and his writing. Check out his earlier books too- 'American Taste', 'Villas At Table', 'Between Bites' and 'My Mothers Southern Entertaining'.

'Two For The Road' by Jane & Michael Stern- the autobiography of their early life on the road in search of regional and authentic American road food. Dipipi sent me this and after just one read, it is firmly established as one of my all time favourite books.

'Family Life' and 'Still Life' both by Elisabeth Luard. These autobiographical books chart the life of a food and cookery writer who moved her young family to Spain, then France and her experiences both food and non food, thereof. The second book deals with her adult travels around Europe (particularily Eastern Europe and Scandinavia) in search of regional cooking and both books contain recipes.

'Dear Francesca' by Mary Contini- this is a book written by the owner of the famous Italian food store in Edinburgh called Valvona & Crolla. it charts the family ancestry and how the founder of the store walked from Italy to Scotland! In the form of a fond letter to her daughter, the author goes through the main Italian ingredients, discusses their uses, weaves in family foodie tales and includes recipes incorporating them.

'Just Like Mother Used To Make' by Tom Norrington Davies- a good basic cookbook dealing with easy to make, British heritage type recipes.

'The Domestic Goddess' By Nigella Lawson- the seminal baking book by La Lawson. Gorgeous, cute, sexy and easy recipes in a brilliantly designed book. Also her first tome- 'How To Eat', an enormous, wordy, conversational book about eating- chock full of recipes and foodie talk and with brilliant chapters on cooking for children and their parties, cooking for one, using up leftovers, cooking for a rainy day aka freezer cooking etc.

I will wade in here to post my favourites - both by Laurie Colwin. The first is called "Home Cooking" and the second "More HOme Cooking - A Writer Returns to the Kitchen" Colwin was a regular contributor to Gourmet Magazine before her death and these books are a compilation of her work. They are a delightful read a combination of homey and wickedly funny with some great recipes.
