A pike is a long sharp pointy thing......you know, from medieval times.....for roasting marshmallows and keeping the minions at bay. ;)

Oh, sorta like a "pitard". In mideval times, warriors killed their enemies and cut off thier heads, and hoisted them on tall poles, called "pitards". So nowadays, if someone makes an ars of themselves, you can say they hoisted themselves on their own pitards. heheee

Has anyone here eaten at The CheeseCake Factory? They have the best Shepherds Pie I've ever tasted.

Kitty Litter Cake

Ingredients:

1 German chocolate cake mix
1 white cake mix
1 large pkg vanilla instant pudding mix
1 pkg vanilla sandwich cookies
Green food coloring
12 small Tootsie Rolls
1 NEW kitty litter pan
1 NEW plastic kitty litter pan liner
1 NEW Pooper Scooper

Directions:

Prepare cake mixes and bake according to directions (any size pans). Prepare pudding mix and chill until ready to assemble. Crumble white sandwich cookies in small batches in food processor, scraping often. Set aside all but about 1/4 cup. To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix using 5. When cakes are cooled to room temperature, crumble into a large bowl. Toss with half the remaining white cookie crumbs and the chilled pudding. (Mix in just enough of the pudding to moisten it. You don't want it soggy. Combine gently).

Line new, clean kitty litter box. Put mixture into litter box. Put three unwrapped Tootsie rolls in a microwave safe dish and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat with 3 more Tootsie rolls and bury in mixture. Sprinkle the other half of cookie crumbs over top.

Scatter the green cookie crumbs lightly over the top. (This is supposed to look like the chlorophyll in kitty litter.) Heat 3 Tootsie Rolls in the microwave until almost melted. Scrape them on top of the cake; sprinkle with cookie crumbs. Spread remaining Tootsie Rolls over the top; take one and heat until pliable, hang it over the side of the kitty litter box, sprinkling it lightly with cookie crumbs. Place the box on a newspaper and sprinkle a few of the cookie crumbs around.

Sweet & Spicy Nuts

1.5 tablespons sugar
1 teaspoon salt (or to taste)
.75 teaspoon cayenne pepper
.50 teaspoon ground cinnamon
.50 teaspoon ground allspice
.25 teaspoon ground cloves
2 tablespoons canola oil or peanut oil
4 cups unsalted raw nuts (walnut or pecan halves,whole almonds, cashews or peanuts)


Preheat oven to 350 degrees. Mix first six ingredients in a large bowl. Then mix in oil, then the nuts.
Spread on a rimmed cookie/baking sheet. Roast until nuts
turn golden (approxomitely 20 minutes) Cool and serve.

Iberian Black Bean Soup


1 pound dried black beans
3 tablespoons extra virgin olive oil
3 cloves of garlic, minced
3 leeks, white part only, washed and finely diced
1 red bell pepper, cored, seeded and finely diced
3 celery stalks, finely diced
2 medium carrots, peeled
1 teaspoon dried thyme
1 teaspoon coarse sea salt (or to taste)
1 cup Madeira plus extra for finish
2 chipotle chiles in adobo sauce, chopped
1 bay leaf
10-12 cups water
Sour cream

Sort beans to remove any stones. Place in large bowl and add cold water to cover by 3-4 inches. soak overnight.

Heat olive oil in large heavy soup pot over medium heat.
Add garlic, leeks, bell pepper, celery, carrots, and thyme. Sprinkle with salt and mix well. saute until soft but not browned, about 10 minutes. add 1 cup madeira and cook until the liquid is reduced by half. Stir in beans, chipotles, and 10 cups of water. Bring to boil and reduce heat. Cover and simmer, stirring occasionally. Add
more water if needed. Cook until beans are very soft, about 2-2.5 hours. transfer to blender in batches and puree until smooth. reheat if necessary.

ladle into bowls, spoon a little sour cream into center.
Drizzle a couple of teaspoons of Madeira around the cream and serve

Will serve 6 to 8

This recipe won "Best of Show" in the Crock Pot Cooking Contest at the Texas State Fair.

Mexican Tamale Soup (Stew)

1 lb ground beef
1 onion chopped
1 green pepper
2 Tblspn. oil
1 c. frozen corn
2 c. water
2 beef bullion cubes
16 oz can pinto beans
1 Tblspn chili powder
16 oz can tomatoes, chopped
1 tsp. ground comino powder
salt & pepper to taste
10 tamales shucked, quartered
Monterey Jack cheese

In a skillet, brown beef, onion and green pepper in oil until browned. In a crock pot, combine beef mixture,corn, water and bullion cubes. Add pinto beanes, tomatoes, chili powder, comino, salt and pepper to taste. Cook on low for 6-8 hours. About 30 minutes prior to serving, add tamales and heat thoroughly. Do not cook tamales too long as they will fall apart. At serving time, sprinkle with Monterey Jack cheese. Yield: 4 to 6 serving.

I double the recipe and freeze some. Really good.
