The quick answer is that a service almost neeeds to be a fixed price item rather than an auction, unless you want to do it cheap.
The bigger problem is that the price is going to be different depending on weight and distance, so what price do you put down. I have several choices for my service listed in my store, and if I need to charge a different amount, just put up an item for that amount and have the buyer purchase it. But that IS pretty cumbersome.
That is where I think eBay could do more to help service sellers......
