Thanks for your question. Once your listing is live, you can only make one type of revision to the "donation" feature: to increase the percentage of your donation. You cannot remove the nonprofit or decrease the donation percentage from a live listing. We could do a better job of making this more visible for sellers like you.
So I'm sure you're wondering why we have this rule. As soon as your listing has gone live, the benefiting nonprofit is notified and they have the option of reviewing and approving it. Once approved, they're hoping to get a donation from your listing. Since their approval may be partly due to the donation amount you'll be making, we don't let you "downgrade" that.
I know this doesn't change the facts for you in this case, but I hope it helps explain a little more of the "what" and "why."
