The recipe for the best scones ever:
(makes 6 big ones)

- 225 g self-raising flour
- a pinch of salt
- 40 g granulated sugar
- 50 g cold butter, cut up in little pieces
- 75 g raisins (or other dried fruit)
- 1 egg, beaten
- 3 Tbsp milk

1. Preheat the oven to 220˚C and line a baking sheet with parchment paper.

2. In a medium bowl, sift the self-raising flour with the pinch of salt, and add in the sugar.

3. Add the butter and crumble this, using your fingertips, through the flour until you have a fine texture, looking a little like rough breadcrumbs.

4. Mix in the raisins and stir in the egg and the milk. The dough will now be very quickly ready. Knead it a couple of times, but don’t overwork it. The dough should now feel soft and can easily be formed into a ball.

5. Divide the dough into 6 round little balls, flat the top and shape them so they’ll be about 2 cm high and have a diameter of 7 cm.


6. Brush them with a little milk/egg yolk (doesn’t matter which) and bake them for 10 minutes.

7. They don’t have their beautiful colour yet, so turn on the broiler for 3 minutes.

8. Now they are perfect. The bottom and outside are golden brown and the inside fluffy and delicious. They can be stored at room temperature for a few days or you can freeze them, but best to eat immediately.

Good day, Audrey!! You are already well into your day!!

I'm quite sure you will not be here alone.

Remembering back to your thread at the Park... a golden oldie!!! What did you call that thread though...I don't remember!! I do remember that your thread beckoned me to join in, given your charm and grace :) !!

It is 6 a.m. here and my beloved just left for work.

I found some scones a couple weeks ago at Aldi's grocery here in the U.S. I'm sure they aren't better than your homemade scones, but they were better than any scones I've been able to make. They were lemon poppyseed scones.

My friend Susan, who is a Master Gardener, once made some scones with lavender added. They turned out quite dry, but were nonetheless very tasty.

As Chris said, I don't think you'll be alone - there may just be a little delayed posting - It is 6:49am here now and I pop on after I get my son up and he's in the shower...

I will have to try those scones! They are a treat I don't get very often - maybe twice a year ~

Good morning Bertie! It is 9:15 am here. I love a good cuppa tea! I received some vanilla chai tea for Christmas and it was wonderful.

Hi Mindy and Katrina-

Mindy- I really like Chai as well. I have some Chai tea that a lady was selling through a home "tea party" .. She mixed a batch with a can of sweetened condensed milk.... to die for....can't drink too much of that... and I know it would be a no-no for you, but it was good!

Katrina- Even those Aldi's scones (commercial) were good. I got them one day when I was in Green Bay. I did not see them at the Aldi's closer to my home. Other nice thing is these were small...not quite bite-size...but almost. Bite-size is about all I ought to have at a time :) !!

Maybe we should ask Bertie for crumpets, eh?? Tea and crumpets :) !

Good morning everyone!

I love tea. For a regular tea, I prefer Earl Grey cause I love bergamot. It is hard to find loose tea around here but I like Bigelow and Celestial Seasonings in bags. I bought a giant bag of dried jasmine blossoms to add to plain tea to make it smell heavenly.

Audrey - How do you pronounce scones? I always pronounced it scones with a long "o" but heard it was supposed to be said "scons". Please let me know so I can be proper!

Thank you for the Tea 101! We need it here.

I made scones once and they were very good and the next time I guess I used a different recipe as they were way too dry.

Chris~~ That sounds so yummy, but your right, it would be a big no-no for me! I would go into a sugar coma for sure!

Lynn~~ I am also a fan of earl gray. It is one of those teas that really warms me up. I also love chamomile.

One thing I don't like for tea is a fruit flavored. I don't know why but I can't get into fruit flavored teas or coffees.
