Where can I find boxes to fit Framed med to large art for shipping? Should I take a larger than needed box and trim it down? Also any recommendations on which method to ship ?

If you will be shipping many of this size you can buy boxes at uline they offer all kinds of shipping supplies. If you will only be needing a few I recommend putting the box size you need give yourself a little extra space and try Amazon. I get alot of my boxes there. Don't forget if you have an Ebay store you get some free shipping supplies every quarter.

If it is watercolor it is okay but never for oils.

The UPS store sells boxes for large artwork. The best method is the quickest method. In general, I find FedEx to be easier on packages than UPS. I wouldn't recommend USPS because they will not pay for damage even if you bought insurance.
